Ceviche is a is a seafood dish popular in the coastal regions of Latin America. It is typically made from fresh raw fish cured in citrus juices, such as lemon or lime, and spiced with peppers. Ceviche is a loved appetizer and it is perfect for hot days of summer. The dish is also one of Jennifer Lopez favorites and she even shared her favorite recipe with InStyle last year. If you want to cook JLo’s ceviche, here’s the recipe:

Sea Bass Ceviche (serves six)
1-pound sea bass (cubed small)
1 cup Choclo (Peruvian) corn kernels (cooked)
1/2 cup green apple
1 tablespoon red onion (chopped)
2 limes (zest and juice)
1/2 tablespoon extra-virgin olive oil
1 tablespoon chives
1 tablespoon plum Roma tomato (seeds removed, diced)
1/2 teaspoon kosher salt
1 cup cilantro (reserve and toss in before serving)
Chop the seafood into small, bite-sized pieces.
In a large mixing bowl, combine ingredients and mix well.
Place in plastic container and marinate in the refrigerator for at least 2 hours before serving.
